Maine Blueberry Compote
Ingredients:
2 cups fresh Maine blueberries (frozen will do)
3 tablespoons water (only 2 tbs if using frozen blueberries)
1/4 cup sugar
1 tsp of lemon juice
Directions:
1). Place 1 cup blueberries, water, sugar and lemon juice in a
pot over medium heat. Let this mixture come to a slow boil
then reduce heat & let simmer for 10 minutes.
2) Add the remainder of the blueberries. Let them simmer for
another 10 minutes.
3) Serve over warm buttermilk pancakes or even ice cream!
Katie's Apple Crisp
I would love share a photo of our oh, so delicious apple crisp, but alas, my brand new camera is having issues. You will just have to take my word that this is the most amazing apple crisp EVER! The recipe makes a huge dish, so if you want to cut it the recipe in half, feel free, but you will wish you had made the whole darn thing.
Preheat your oven to 350 degrees
Ingredients for the apple layer:
5 pounds of peeled & sliced up apple (Mac's, Cortlands, Grannies, or a mix work well)
1/2 cup sugar
2 tablespoons of lemon juice
2 tablespoons of orange juice
1 tablespoon of ground cinnamon
Mix the apple layer together so all the apples are thoroughly coated. Place in a buttered 9 x 13 baking dish (be sure to include all the juices).
Ingredients for topping:
1 1/2 cups flour
3/4 cup sugar
3/4 cup brown sugar
1/2 teaspoon of kosher salt/sea salt
1 cup quick oats
1/2 cup cold butter, diced (I didn't say it was healthy :)
Combine all of the topping ingredients in electric mixer bowl. Mix on low with the paddle until the ingredients are blended and crumbly. You can do this by hand, too. Place the topping on top of the apple mixture. Don't forget to use all of it. You'll regret leaving even the smallest morsel of the topping behind.
Bake for about 1 hour until the top is browned & apple mixture is bubbly. If your dish is very full, be sure to place a baking sheet under the dish when baking.
Best when served warm with a smidge of vanilla bean ice cream.
