Sunday Six 9/27



I am skipping out of soccer today. It is pouring rain and I am feeling
a tad under the weather again. Mommy guilt is setting in.

1)I finally got around to uploading
some of my layouts from the crop in Wisconsin.
(that is what happens when you stay at home sick).
****I had uploaded some of my faves but for some reason
blogger is uploading them in FULL size, I'll try again later.

2) Kass got her hair cut shorter and some subtle red highlights this
week. She wanted bold red highlights, but thankfully our wonderful
hairdresser, Heather,knew that I was a little leery and
went on the lighter side. Thank you, Heather!

3) I ran 7 miles with my running partner, Lisa.
This is the farthest distance have ever run & it felt great!
I felt so good in fact, I finally committed to running
a 1/2 Marathon on November 8th.
I'll keep you all updated on my progress.

4) Friday night wine & pizza night has become a standard way
for us to spend our Friday nights. Scott makes some killer
homemade pizza and I provide the wine. Sometimes friends join us
and sometimes it is just us. This week our friend, Steph, joined us.
I am really loving this ritual!


5) Lily & I spent our Saturday afternoon at Alpine Indoor Rock Climbing
Gym.Her BFF, Riley, had a kick butt birthday party there. It was so
much fun watching the 10 girls climb to their hearts content.
Some of them were so agile and swift...including Lily.

6) I have a little Etsy obsession. Have you visited Etsy? It is an amazing
online market place for crafters. All kinds of crafters. I have been
buying handmade items off of Etsy for several years & have
not once been disappointed. I started book marking vendors
this week for Christmas gifts. Here are some of the ones
that caught my eye this week:

Monday's Recipe: Apple Crisp

I would love share a photo of our oh, so delicious apple crisp, but alas, my brand new camera is having issues. You will just have to take my word that this is the most amazing apple crisp EVER! The recipe makes a huge dish, so if you want to cut it the recipe in half, feel free, but you will wish you had made the whole darn thing.

Katie's Apple Crisp
Preheat your oven to 350 degrees
Ingredients for the apple layer:
  • 5 pounds of peeled & sliced up apple (Mac's, Cortlands, Grannies, or a mix work well)
  • 1/2 cup sugar
  • 2 tablespoons of lemon juice
  • 2 tablespoons of orange juice
  • 1 tablespoon of ground cinnamon
Mix the apple layer together so all the apples are thoroughly coated. Place in a buttered 9 x 13 baking dish (be sure to include all the juices).

Ingredients for topping:
  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1/2 teaspoon of kosher salt/sea salt
  • 1 cup quick oats
  • 1/2 cup cold butter, diced (I didn't say it was healthy :)
Combine all of the topping ingredients in electric mixer bowl. Mix on low with the paddle until the ingredients are blended and crumbly. You can do this by hand, too. Place the topping on top of the apple mixture. Don't forget to use all of it. You'll regret leaving even the smallest morsel of the topping behind.

Bake for about 1 hour until the top is browned & apple mixture is bubbly. If your dish is very full, be sure to place a baking sheet under the dish when baking.

Best when served warm with a smidge of vanilla bean ice cream.

Sunday Six


Time for an update in my crazy life. Figured it was a good time to start a weekly recap on Sundays. Lucky for you, you are getting the past month's recap while I listen to the Emmy's.

1) The girls went back to school in style at the beginning of the month. I can' t believe that my girls are in 11th & 5th grade. No more elementary school activities for us. Boys crushing on both my girls. Stylish is in their eyes, not mine. Here is to a great school year for both of them!
2) My Playroom is almost done. Do you see the beautiful bamboo floor? Oh, how does it shine & make my room bright! The baseboard is now in. Still missing some chairs, curtains, a cool clock, and wall art. Those things will come in time. Waiting to find the perfect pieces....
3) Lexi - have you met Lexi yet? She has been part of our family for a little over two weeks now. The girls & I went to the Animal Welfare Society to look at two puppies. We came home with Lexi instead. Lexi is a 2-year old rescued greyhound. She is sweet, lazy, and so very attached to us already.
She is the perfect addition to our family!
4) My 39th birthday was last week. A trip to Wisconsin to scrap with some of my scrappy friends was my birthday gift. Not only was that the best present EVER, but on my birthday I got a fabulous cake with my favorite frosting....bakery butter cream. None of this grocery store yucky stuff, but REAL butter cream. After 17 years, Scott got it right.
I couldn't have been happier.
5) I have been in card making mode this month. Partly due to a request from Bree (jessicabree) at Scrap Freak for a card for the Card Mix & Match class she is doing this month. If you haven't checked it out, you definitely should! There are lots of yummy sketches (by Bree) and examples done by Freaks. I love that she included us a part of this class. I recommend that you check out her Get Meaningful free class blog, too.

6) Apple Picking Season is here in Maine. I love this time of year. There are three locally owned apple orchards within a mile of our house. Lily & I took our friends Riley & Porter apple picking yesterday. Then we made a HUGE, delicious apple crisp. Oh, how good the house smelled while that was baking. I'll post the recipe this week.

ScrapFIT Workout #4 Reveal... an easy challenge with a fabulous prize

My layout above is for the 4th fun ScrapFIT challenge.  I used Cosmo Cricket "Happy Camper" line for this. The pictures are of the wonderful nature we saw at WellFleet Bay Wild Life Sanctuary in Wellfleet, Massachusetts.  

ScrapFIT's 4th challenge is one for everyone!  All you have to do is a "No Peep" layout using some Cosmo Cricket products.  Show us your pets, flowers, a sunset, etc.; just no people.   A generous "Earth Love" crafting kit(see photo below) provided by Cosmo Cricket is the prize for this challenge.   I just bought this line for myself and it is even better in person!!! 
Life has been incredibly busy the last few weeks. I promise to share some updated pics of my craft room (now officially dubbed my "playroom"), some layouts, and cards very soon!
