Maine Blueberry Compote

As the name of my blog suggests, 
I also love to cook and run.  
It isn't often enough that I highlight those aspects
of my daily life. Today I am sharing with you
a recipe for Maine Blueberry Compote.

Each year we try to head "upta camp."
Our friends own a lovely little cabin on an island 
near Milo, Maine (A.K.A. the middle of nowhere, ME).  
No running water, no electricity.
This year the blueberry bushes were just overflowing 
with ripe blueberries, so the Lily & Scott got to picking
with the promise that I would make buttermilk pancakes
and blueberry compote when we got home.


Maine Blueberry Compote

Ingredients:
2 cups fresh Maine blueberries (frozen will do)
3 tablespoons water (only 2 tbs if using frozen blueberries)
1/4 cup sugar
1 tsp of lemon juice

Directions:
1). Place 1 cup blueberries, water, sugar and lemon juice in a
pot over medium heat.  Let this mixture come to a slow boil
then reduce heat & let simmer for 10 minutes.
2) Add the remainder of the blueberries. Let them simmer for 
another 10 minutes.  
3) Serve over warm buttermilk pancakes or even ice cream!  

This simply delicious recipe is so easy that your children 
can do it. With supervision, of course.
They will love the yummy sweetness &
will insist that no syrup is needed!

P.S. I have decided I need some new pretty dishes 
for when I photograph food.  :)
